Harriet's Jelly Cookies

This is the recipe that launched this website, Harriet's Jelly Cookies!  But more than that, they've been my family's equivalent of Proust's petite madeleine, having anchored dessert at so many family gatherings and life cycle events, that each bite triggers a barrage of memories.  Sure, the meringue Kisses, Vanilla Horns, Les Tuiles, and Betty Greene's Brownies have played their part on those platters of cookies, but Jelly Cookies rule them all.  Is it the buttery cookie melting on your tongue as the sweet and tangy raspberry jelly shines through? Or is it the love behind each thumbprint cavity into which the jelly is spooned? You be the judge!

 Grilled Vegetable Sandwich Recipe
  • In a large resealable plastic bag, combine the zucchini, pepper, onion and salad dressing. Seal bag and turn to coat; refrigerate for at least 1 hour. Drain and discard marinade.
  • Brush cut sides of bread with oil; set aside. Place vegetables on grill rack. Grill, covered, over medium heat for 4-5 minutes on each side or until crisp-tender. Remove and keep warm. Grill bread, oil side down, over medium heat for 30-60 seconds or until toasted.
  • In a small bowl, combine the mayonnaise, lemon juice, peel and garlic. Spread over bread bottom; sprinkle with cheese. Top with vegetables and remaining bread. Cut into four slices. Yield: 4 servings.
